I had big plans to pull out the ingredients to make all kinds of mushy shaped Valentine's Day cookies, today, but Sophia is not feeling well. Plan B consists of snuggling on the couch, consuming an unmentionable amount of chocolate milk, water, jello and popsicles and watching too many Disney.

Anticipation & Trust

I have to admit, a week ago today, I was a mess! Seriously!

Michael and I had made a commitment to attend a marriage retreat and this meant I would have to leave Sophia for several days. We knew this retreat was God's will for us, because of the way all the plans unfolded. We got the brochure in the mail a few months ago and I asked Michael if he wanted to go and he responded by saying: "Ugh, I am not sure. We would have to find someone to watch Sophia and pay for the (costly) retreat. Let's think about it." It wasn't more then three hours later that his mom called and asked if she and Michael's stepdad could take Sophia for a weekend. Wow! As soon as they asked, both Michael and I knew we were meant to go to this retreat.

With the decision made, I had a few months to get used to the idea of leaving Sophia, but I didn't know how hard it would be, until last week. Up to that point, I had only spent a few nights (not all at the same time) away from Sophia and she was still in the same state! Knowing she was out of my reach and at least 4 hours away from me, made the idea even scarier. Of course, I was also worried about her eating the wrong foods (those that contained peanuts), getting into a car accident and then, of course, missing us (or maybe me missing her more).

I have to admit, the only thing that got me through last week was God. I had to lean on God and trust that He was in control. I knew this was His will for us and I had to trust everything would happen as He wanted it to. So, we packed up the car, let our little girl go off for the weekend and now, I am here to say I survived. With God's help, I made it through the weekend. Sophia is safe and I am sure that the grandparents are nestled in bed, recovering from their weekend with a toddler!

With a high of nearly 30 degrees and beautiful sunshine, our family headed outside today. Michael and I have been dying to build a snowman, which we haven't done together (or at least I don't think we did when we were dating) and we thought it would be a great family project. So, we bundled the kiddo up and headed out.

Messy Fun

Since the "Let It Snow...." post, Old Man Winter has decided to grace Minnesota with his presence. We have a beautiful layer of fluffy white stuff on every surface of the ground and it is so beautiful outside. But as to be expected with the fluffy white stuff, we also have plenty of cold weather. This colder weather has made it a little challenging to get outside. With that said, I decided earlier in the week to make a rice bucket. I know this sounds crazy, but the mess was totally worth the fun that was had.

If you don't have your own rice bucket, I highly recommend mixing up some of this messy goodness. I have never seen Sophia sit and play in one spot for more then five minutes, but when I pulled out the rice, she sat for forty-five minutes had made a wonderful mess. Of course, it wasn't a mess our vacuum couldn't handle ;)

Ingredients:
3-4 cups of rice
1 bottle of food coloring
1 1/2 TBLS rubbing alcohol.

Toss in a baggie, let the kiddo mix the rice until well colored, poor onto a parchment paper cookie sheet and let dry.

The Last Four

Ladies and Gentlemen, I am proud to announce Sophia is getting her last four teeth. I know, it was a long time coming. A year ago Sophia only had four teeth. I was a mom in distress, thinking my child was born without teeth and I would soon be investing in toddler dentures! No matter how many people reassured me that her teeth were there, I still worried. I had never known a child to take so long in getting teeth. Actually, someone asked me, just the other day, "You mean Sophia didn't have any teeth on her first birthday?" Um, no! She was toothless!

Although I am relieved to finally see those pearly whites, today, I nearly wanted to pull out my hair! I stuffed every cold object I could in Sophia's mouth to ease her pain. The last four are eye teeth and they have broken through the gums, which is a great thing. So, here's to teething and a now, full mouth of teeth!

This post is for those of you who follow us from out-of-state or country. Oddly, Minnesota, in January, is missing one thing....snow. It is January 18th and we have had a shortage of the fluffy whites stuff, this year. In fact, this is the view from our doorway:

Despite our lack of snow, Sophia and I still managed to make some snowmen today.

*Just a side note, I forgot to add the arms to the snowmen before taking this picture. We gave it to my mom, so at some point, I will need to add the arms. Either way, they are still cute.

Snake

I have recently discovered Sophia loves snakes! She loves to look at them and most of all, she likes to draw them! Sophia and I were drawing last week, when she got up for a mere 2 seconds and decided to draw a snake on my bathroom wall! Of course, I had to be the "mean" mommy and place her in time-out. This time-out was one of the hardest for me to bare. All while sitting in time-out Sophia cried "it's pretty Mommy! It's pretty Mommy." My heart was broken as I sat and listened to her. I want her to know that her creations are beautiful, but how do you do that when it's wrong? I simply explained to Sophia that her snake was beautiful, but we need to draw on paper. This was also one of the first pictures that had a "name" to the object, thus making me a proud mommy. Here's to many more snakes!

Quick Fix Breakfast

Often, when I know we have to get up early, I try to plan on an easy breakfast. Sometimes we just eat yogurt or oatmeal, but lately, I have been trying to prepare something the night before, so we can just sit down to a nice breakfast the next morning. This also gives me a chance to bake something (which I LOVE doing) and still have something ready for breakfast.

While searching Pinterest (I know another Pinterest post :D) I stubbled upon Snickerdoodle muffins. Yes, Please! Who doesn't love the taste of a snickerdoodle?! Not only did I want to make them, but I thought it would be a nice warm tasting treat, since it is winter and cinnamon is a comfort flavor for us.

The recipe is as follows:

2 sticks unsalted butter
1 cup sugar
2 tsp vanilla
2 eggs
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp cream of tartar
3/4 tsp freshly grated nutmeg
1 1/4 cup sour cream
2 1/4 cups all purpose flour

1/2 cup sugar and 1 TBSP cinnamon mixed together for rolling*

1.Cream the butter and sugar until soft about 3 to 5 minutes. Add in the vanilla. Add in the eggs one at a time and mix until each is incorporated.

2.In a separate bowl, mix together the flour, baking soda, baking powder, cream of tartar and nutmeg.

3.Add the flour mixture and the sour cream alternately to the egg-butter mixture in the additions. Start with the flour and end with the flour. Scrape the bowl occasionally.

4. Using an ice cream scoop, scoop out muffin batter one at a time and drop into a shallow bowl filled with the cinnamon sugar mixture. Roll the muffin around in the mixture until it is covered completely in cinnamon sugar. Place muffin into muffin tin. Depending on the size of your tins, you should get about 12 to 14 muffins. Bake them for approx. 20-22 minutes in a 350F oven or until they are golden brown.

When I made these muffins, I ended up with 12 large muffins. They stayed fresh on the counter overnight, covered with a towel. I stored them in a large plastic baggie for about 5 days and they stayed moist until the last one was gobbled up. Enjoy!

Homemade Kindle Touch Cover

For my birthday I had gotten a Kindle Touch. I wasn't able to use the Kindle Touch until just recently, since I had a stack of paperback books on my "to-read" list and I knew if I started on my Kindle Touch, those paperbacks would never reach my hands. Before getting the Kindle Touch I searched for a cover, but didn't find one I really liked, nor did I want to shell out $25-$50 for. Finally, I decided I would make one.

Unlike some of my past blogs, I decided step-by-step directions weren't needed. Instead, you can head on over to http://www.skiptomylou.org, where she has step-by-step directions.

The photo above is a bit hard to see, but the left side has three pockets and a side pocket to put the Kindle Touch in.

I did do a few things differently. First, I adjusted the measurements to fit my reader. Second, before I hemmed pieces 4, 5 and 6, I sewed them together, making it easier to hem them. Second, I didn't add the elastic or the card stock. I am not sure if I will do that yet or not. It is something I can do in the future, if I decide to.

Sadly, I made this a little too late, because Sophia got to my Kindle Touch and scratched it in three places. The scratches are minimal and small, so my Kindle Touch wasn't damaged too badly.

All-in-all, I made this cover for about $10. I made it twice and the first time it was a tad too small, but the second time I made the cover, It took me about two hours to complete. I also learned how to make an invisible hem, fix the tension on my sewing machine, and sew on a button :D The time spent was well worth it!

Off to a Rough Start

We are now six days into the new year and our family hasn't started it off with a bang. Before the New Year, on December 25th, I was given a concussion, by my beautiful toddler. I have yet to recover from the incident. This was one way I didn't want to start the New Year. I am suffering from painful headaches, memory loss, I am not able to sleep and I am still horribly tired. I can assure you this is not easy when you are trying to keep up with a moving toddler.

In addition to the the concussion, we are all under the weather. Ho Hum. Sophia is getting four eye teeth and it seems as though when she is teething, she always gets a cold, which she so gladly shared with her parents. The good thing is that we have spent a lot of time snuggling on the couch. :D

All our usual activities have been postponed, due to Christmas and New Years, but they commence on Monday. I sure hope we will all be recovered by 9 am on Monday morning.

Puppy Chow Gone Wild

One of our favorite holiday snacks just happens to by Puppy Chow. I have to admit that this year I was panicking, because with Sophia's peanut allergy, I knew this snack could not be made. Finally, I decided to try the recipe with Nutella. A.M.A.Z.I.N.G!
I don't think I will miss the old Puppy Chow at all and the best part is that it is safe for our whole family to enjoy! P

Ingredients

1/2 cup butter
1 cup Nutella
1 1/2 cup semisweet chocolate chips
13 cups (more or less) or one 12oz box of hearty wheat/corn/rice cereal like Chex – try to find a hearty version so it doesn’t break down when stirring
2-3 cups powdered sugar

Directions:

In a pan over medium-low heat, melt the butter and chocolate chips, stirring constantly.
When all is melted and smooth, remove from heat and stir in the Nutella.
Slowly pour the chocolate Nutella mixture over cereal in a large mixing bowl. Wash your hands and use them to stir everything together until fairly evenly coated.
Wash those hands again and add the cereal to a gallon sized ziploc bag.
Pour in the powdered sugar and shake, starting with 1/2 cup at a time. You want to make sure everything's coated, but not too sweet!

Next time I make this recipe, I plan on decreasing the amount of Chex cereal I add. 13 cups was way too much and not all of the cereal was fully coated.

Thanks to Pinterest, I transformed Sophia's original letters into "Big girl" letters. I knew I wanted to keep the letters we had first painted for Sophia in her room, but they needed a makeover. After taking a few days to complete the project and a few more to hang them, here is the final result:

Looking Back

One year ago today, we packed up our cars and drove the long 10 hour trek from South Dakota to Minnesota. Trust me, if you have never driven it, it's long and boring.

Our year started off slow. We lived with family, whom we are so grateful for, for over 2 months. This was difficult as we had to make some major adjustments and so did they. Their patience and love for us was evident and still is. I am not sure where we would be had they not extended their open arms to us and excepted us as their own children. For that, we are and will always be grateful.

After much decision and prayer, God opened the door for Michael to start school, instead of a job. God provided us with a home in the perfect location! We currently reside just behind Michael's school. We actually didn't realize the school was around the corner, until we had signed the lease. If that isn't God, I am not sure what is! This also led to our decision to become a "one car family."

In addition to a house, we have been blessed financially. Obviously, if the two adults don't work, the money doesn't come in, but God has faithfully provided in ways we never would have imagined. The road to getting the finances we needed was long and hard, but we can now say God has provided us with enough to survive and rebuild a nearly empty emergency fund. Watching God move in this area in our lives has really changed my relationship with God, for the better.

God has provided us with a church family and an extended church family. He has provided us with friends, and even mentors.

We have had some major adjustments since Michael left the military. We have endured some hardships and although I would never ever want to relive them, I am grateful for them. We will struggle with many of the hardships for a long time, if not for life, but trusting in God makes it a little easier. As I look back at the last year, I can see how God prepared us for this time in our lives. He provided us with many tools (Dave Ramsey, Love and Respect, One car in the Azores and so many more) that we have had to utilize over the past year. God knew we would need help with our finances. He knew we would need to know how to love and respect each other and He knew we would need to know how to manage one car.

To say that we are blessed is an understatement. God has given us a beautiful girl and love for each other. He has not been walking behind us this year, but instead, He has been standing right along side us, holding our hands.

With all that said, God is good, even when times are tough. God is there, even when we don't see Him. God is just, even when we don't think so. God is LOVE!

Maybe Next Year

Earlier this month, while waiting in line to checkout, I became a victim of the end cap! The moment I saw this

I thought we needed a cute little gingerbread for our house. At this point, you may start laughing, because you probably know what I didn't: that you can't build a gingerbread house with a two-year-old!

First, they want to eat the pieces.

Then they want to knock the walls down and draw on them with the frosting.

At this point, to stay sane and admit that I don't have the patience to continue to put the walls up, I surrender to my two-year-old and let her create her own gingerbread house.

Although the house didn't look like it did on the outside of the box, these pictures

Feet Tree

I know I have posted a lot of crafts on our blog lately, but that is what we have been busy doing. Although it was 50 degrees in the Land of 10,000 Lakes today, we have had some colder weather and with the cold weather, we can only spend a few minutes outside. Plus, my toddler doesn't do well all bundled up in clothes she can barely move in.

So, since it has been cold and there are so many cute Christmas crafts, we have been busy with the paint.

Because this craft involved using our feet, I did do it on the floor! Crazy right? In the end, a little time wasted on fun, a happy content toddler and a cute craft is so worth the mess on the floor.

DIY Cupcakes

When I started planning Sophia's birthday I knew I wanted to make a cake or cupcakes in order to, one, save some money, and, two, to make her party more special. Although they weren't perfect, they were a big hit and Sophia knew exactly who they were. This is what I came up with:

1. Bake the cupcakes

2. Create slits in part of the cupcakes and insert halved chocolate chip (or any other kind of cookie)

3. Cut marshmallows in half

4. Use a Wilton 21 tip to make stars. I made mine with a little length to make the cupcakes look furry

5. Use Wilton 5 tip to make pupils on the marshmallows and stick to the cupcake. Cut an oreo in half for the mouth and use a gumdrop (or a peanut m&m, which obviously couldn't use) for the nose

6. Enjoy!

DIY Party Sign

1. Clean out a milk jug

2. Create a ghost face (if you are smarter then myself, you will not create the face on the same side as the expiration date!)

3. Cut a hole in the back of the jug

4. Stuff the jug with white Christmas lights

Sophia is turning the big 0-2 on the 20th and for the past few months I have been trying to come up with a birthday theme for her birthday party. After much thought, I decided Sesame Street would suit her well. I knew I wanted to make her invitations and this is what I came up with:

Step 4: Get the original idea disapproved by the hubby

Today's Lessons...

I am constantly amazed at how much God teaches me about being a mother. Today, I have to admit, I think God went a little overboard with the lessons! This is what I learned just TODAY!

1. When your child asks you to smell her hand, don't, because it has probably been down her pants.

2. Don't talk to other parents at the park when your child is playing. She may put all her trust in the 3-year-old boy, standing at the bottom of a 4-foot drop, and jump. And then, she might look at you and say "Jump more," while you are still recovering from a heart attack!

3. Don't just assume that your child will never put her hand into your Scentsy warmer, because at some point, she will, and then she will surprise you with a wax covered hand, all while smiling and saying "Mommy, Scentsy!" P.S. Thank God we don't use candles!

4. Don't leave a salad spinner and the leftover spaghetti sauce within the toddler's reach, lest you end up with a sauce covered child, couch and toys!

5. In the end, it doesn't matter what has happened, mess or not, at least we don't have broken bones, burnt fingers and the stains can be removed (hopefully). And, at least we can curl up at the end of the night and say "Thank you, Lord, it was all worth it!"

I didn't realize that I have gone one month and 12 days without blogging! I am sorry, if I have any dedicated readers out there :D

I have recently decided to use my time differently. Although I love to blog, I also love doing other things, such as knitting, cooking, reading, and spending time with my family. These things have been on the forefront, while blogging and facebook have been placed on the back burner. Also, this summer has gone way too fast and I am trying to lavish in as much outdoor time as I can, while I can still go outside without putting on long-underwear, hats, gloves and coats, thus, blogging has not been a priority.

I do have some things to post, so when the weather really starts to cool, I will start blogging a bit more, but for now, I will be outside, breathing in the beautiful fresh air, before my lungs turn to icicles, with each inhale!

Books on a Budget

Today Sophia and I went to Savers, a local thrift store, similar to Goodwill, for the first time. We got some awesome deals, but the best deals we found were on books. If you know anything about Sophia, you know she is a bookworm. We have more books then a toddler can read in a week and we will probably only continue to get more. Since the person we went with had an additional 40% off coupon we decided it was a great day to buy some more books to add to the collection.

We purchased five books for thirty-three cents each! Who can say no to that kind of deal?

Strawberry Rhubarb Crisp

As I was reading the updated Facebook statuses the other day, I came across someone who had posted about making Strawberry Rhubarb Crisp and I decided I had to have some. Because of our CSA and another person, I have plenty of Rhubarb to use up.

I set out searching for a recipe for the mentioned Strawberry Rhubarb Crisp and this morning I whipped this recipe up:

Ingredients

4 cups fresh rhubarb, 1-inch diced (4 to 5 stalks)
4 cups fresh strawberries, hulled and halved, if large
1 1/4 cups granulated sugar
1 1/2 teaspoons grated orange zest
1 tablespoon cornstarch
1/2 cup freshly squeezed orange juice
1 cup all-purpose flour
1/2 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup quick-cooking (not instant) oatmeal, such as McCann's
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
Vanilla ice cream, for serving

Directions

Preheat the oven to 350 degrees F.

For the fruit, toss the rhubarb, strawberries, 3/4 cup of the granulated sugar and the orange zest together in a large bowl. In a measuring cup, dissolve the cornstarch in the orange juice and then mix it into the fruit. Pour the mixture into an 8-by-11-inch baking dish and place it on a sheet pan lined with parchment paper.

For the topping, in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, the remaining 1/2 cup granulated sugar, the brown sugar, salt and oatmeal. With the mixer on low speed, add the butter and mix until the dry ingredients are moist and the mixture is in crumbles. Sprinkle the topping over the fruit, covering it completely, and bake for 1 hour, until the fruit is bubbling and the topping is golden brown. Serve warm with ice cream

We have acquired some new neighbors. Now, these aren't your typical neighbors. Unlike the other neighbors, these ones aren't thumping their music at all hours of the night. They aren't leaving their trash outside and they aren't smoking outside my front door, on a beautiful, open the windows, kind of day. They do, however, know how to give you a heart attack, if you don't worn them you are coming out the door. They aren't very social and they are expecting triplets any day now.

Something New

Michael and I decided this spring that we wanted to invest in a CSA. For those who don't know, CSA is a Community Supported Agriculture, where we basically bought a share of land for the summer and the farmer does all the work. The best part is that we pick up a fresh new box each Friday, at our local Co-Op. It's awesome and so simple. If you have never done something like this, I recommend it.

This week our box included a variety of vegetables, including onions, rhubarb, lettuce mix, green beans, snap peas, bok choy and beets with the greens. This week I was bound and determined to figure out how to use the beet greens. I was told we could eat the greens, but I wasn't sure about it and I had no clue how to even go about preparing beet greens, until I found this recipe:

Creamy Goat Cheese and Beet Green Pasta
Serves 4

1 tablespoon plus 1 teaspoon olive oil
6 cups washed and sliced beet greens

1/2 pound fettucine (or other noodle)

1/2 cup heavy cream or half n' half
4 ounces goat cheese
1/4 teaspoon fresh thyme
salt and freshly ground black pepper, to taste
2 tablespoons pistachios
1/2 cup grated Parmesan or Asiago cheese

To prepare the beet greens, cut off the thick stalks. Submerge greens in a large bowl of cool water to remove dirt. Drain, rinse thoroughly, and pat dry. Remove any tough inner stalks of the beet green leaves, then slice cross-wise into thin strips. Set aside.

In a deep, heavy pot, cook pasta in salted water according to directions, preferably al dente. If using fresh, it should cook within 3-5 minutes.

In a large skillet, warm olive oil over medium heat. Add sliced beet greens, until wilted, about 2-3 minutes. In a small bowl, whisk the cream and goat cheese until well blended. Add to the skillet, and reduce heat to medium-low. Cook for 3-4 minutes, or until sauce begins to thicken slightly. Add fresh thyme, and season with salt and pepper. Add the cooked pasta to the skillet and toss until well coated. Divide among two plates; top with pistachios and extra grated cheese. Serve immediately.

I have to admit I was a little unsure about trying this recipe, but oh my, it was good! The flavor of goat cheese brought me back to the Azores, where I first fell in love with goat cheese. This recipe reminded me of a three cheese pasta I used to get. It was so good! And oddly, the beet greens were great with the pasta. They really added some flavor to the pasta.

I recommend trying this recipe, especially if you like goat cheese!

And or course, it was even better, because I had a little one to help me clean the beet greens!

Life Verse

I was once asked if I have a life verse, a verse in the Bible, or a song that I cling to and cherish. A verse or song that describes my relationship with Christ. Until recently, I never really thought about this question. I never really felt as though I had a verse or song I could truly call my own. The Bible is full of verses that mean so much to me, but I really couldn't just pick one.

Over the past few months, Michael had I have really been tested. We have gone through trails and circumstance, that God willing, we will not have to face again. But, after saying that, I look back and I wouldn't have it any other way. God used the situations for His glory. God used us, be broke us and all while doing so, He loved us! That is something to cling to!

With that said, I have finally found a song that I LOVE and overflows me with God's love. Of course, this song doesn't come close to the truth and promises written in God's word, but it still means so much to me. This song brings tears to my eyes, each and every time I hear it. I love it so much, I want to share it with you :D

Let's Get Creative

In May we made special Mother's Day gifts for the grandmas and after doing so, I was stumped as to what to make for the grandpas. After much thought, I realized the grandpas are very crafty and one works at home, while the other has his on carpentry building, so why not make them signs!

Here is what we came up with :D

Although these gifts look a bit messy and like a one-year-old got a paint brush and some paint and went to town, the grandpas loved them! We also kept busy during a few rainy days, which was an extra benefit!

Now we need to start thinking about something to make for Christmas!

BTW, we made two different signs, thus the reason for the two different shapes. I forgot to take pictures of both of them during all the stages :D

Where to begin?

I sure hope many of you aren't stalking our blog, because the last few months have been super crazy and I haven't had the chance to sit down to focus on blogging. What I have posted has been minimal and short. I just haven't had the chance to sit alone at the computer, much less gather my thoughts.

We have been though a rough patch over these past few months and we are still trying to get ourselves above the water, just to get a little air. God has been testing us in ways most people can't imagine. Our family has experienced some hardship over the past year and a half and just lately, it all came to a head. Our lives have been forever changed, hopefully for the best. God continues to test us, but at the same time, He is showing us He is here and He will get us through this rough patch.

My aim over the next few weeks is to post a little bit more. I have some new pictures and a few other things to blog about, so when I get a chance, I will be back to do so.

To Go or Not To Go

Ladies and Gentlemen, at the ripe old age of 19 months, Sophia now walks around and tells us when she has to use the bathroom! I am really not sure how this happened, but one day, last month, Sophia started to announce that she had, indeed, pooped! The first time was a fluke, but after that, there was true evidence in the diaper.

We have tried to put her on the potty or on a potty chair, but both scare her. She shows eagerness and signs of being ready in all other areas, except when it comes to actually sitting on the potty.

The amazing thing, to me anyway, is that she can now tell us before she has to go "poopy" and then she goes! How on earth can a 19 month old know? God makes these little guys and girls perfect!

Now the question we are faced with is when will the potty training officially begin. We talk about going potty all the time, we go into the potty and look at it, and we walk around naked for a good part of the day.

I know that Sophia isn't ready just yet, but I have a feeling she will be in the near future. My oh my, she is growing up too fast!

A Few Firsts

This week has been very fun and exciting in our house. Since summer is starting to peak its head around the corner, we decided it was time to celebrate.

First, Sophia was introduced to her first piece of corn on the cob, and just like mommy, she loved it. Keep in mind that our munchkin only has two bottom teeth and a quarter of a top tooth, but she did great!

Second, unfortunately, we live across the street from Culver's, which can be daunting if you don't have self-control. Last night was beautiful, so we decided to go for a walk and get some ice cream, marking Sophia's first attempt at an ice cream cone. Culver's does sport a kid's cone, but it was HUGE!

Finally, after discussing whether or not we wanted Sophia to have long or short hair, bangs or no bangs (we decided long without bangs), today, Sophia sported piggy tails for the first time!!

Just the Beginning

Recently, I decided it was time to be brave and pull out the paint! I just want to thank God for creating the people who make Crayola Washable Paint :D We have used paint before, for our Christmas gifts , but this time, I allowed Sophia to touch the paint without me freaking out or holding onto her hands while forcing her to paint!

Bigger Problems, Bigger Arms!

This past week has been a dreadful week. Our family, once again, has been faced with some serious issues. I couldn't have asked for these certain circumstances to happen on a better week. I know that sounds crazy, but if they had to happen, this past week would be the week I would like to be faced with turmoil.

Yesterday, we celebrated Easter. Easter is my favorite holiday. It is the day we celebrate the resurrection of Jesus Christ. Ladies and Gentlemen, Jesus is risen! He is no longer in the grave! The very though excites me and makes me want to shout! Yesterday marked a day of hope. It reminded me that God is bigger!

So back to our problems, while in church yesterday, I heard God telling me that Jesus is my hope. The reminder that Jesus died on Good Friday and rose again on Easter morning, gives me a reason to get up from the pit I have been sitting in and press on. Of course, I can only do this through Christ who strengthens me. Oh how I can't imagine my life without God. My heart aches for those who do not believe in God. They think that life stops short and it's going to where, they are missing hope. I can tell you, especially after the turmoil I have gone through this week and throughout this past year, that there is hope. Hope in Christ!!

I am thrilled that God is in my life and I am thankful for the circumstance He has given us this past week, because it has drawn me closer to Him. I find peace in knowing that God is by my side and most of all, I want God to be glorified in the outcome of this turmoil. Whatever it may be, God, you will receive the glory!

So, today and for the rest of my life, I will rest in God's arms. I will let Him hold me!

Dave Ramsey is known for saying "live like no one else, so later, you can live like no one else." We believe being financially stable is extremely important, not only for us, but for our daughter too. Therefore, upon having Sophia, Michael and I decided it was important to raise Sophia with an understanding of money and how it works. Our goal is to raise her up on the truths of Dave Ramsey (when it comes to finances) and what he says about money. We are a family of NO debt, NO credit cards and we USE cash for just about everything we purchase. Although we get a lot of sly looks and "what ifs," we know this is the best thing for us and our family. We hope that Sophia will grow up knowing that money is a gift from God and that she needs to use it wisely and according to God's will.

Before Sophia was born, we received a wonderful package in which held a piggy bank. Even though Sophia didn't care at the time, we were thrilled. What better way to start saving then to use a piggy bank. It wasn't until recently that Sophia discovered her "pippy" bank and LOVES to put money into it. In fact, today she went through my purse looking for coins to slip through the slot! Here are some photos of our little saver.

It's Clay Day

Now that Sophia is getting a bit bigger, I decided it was time to introduce her to some play dough. After searching the web, I remembered I had a kids cookbook tucked away and thought I would check to see if there was a recipe in the book for play dough. Well, I found a simple recipe for clay dough whipped some up.

The recipe is as follows:

3 cups all-purpose flour
1 cup salt
2 tablespoons cornstarch
1 1/4 cups water
2 teaspoons cooking oil
Food coloring

Mix flour, salt, and cornstarch in a boil. Add water and oil. Stir and knead til smooth. Add food coloring. Keep dough wrapped in plastic wrap or in a plastic baggie to prevent drying.

Goals

Over the past few months, I have been thinking about different goals and goal setting. While growing up, I didn't set goals for myself. My parents didn't encourage goal setting and now, I am horrible at keeping goals. I know I want Sophia to set goals for herself and I hope she will accomplish the ones she sets, big and small. Therefore, it is important for me to set goals and accomplish them.

In lieu of the thought of goal setting, I have set a few goals myself

1. Read one book a month - I have to admit, I began this goal in February and failed the first and second month. So sad! Well, for the month of April, I have chosen to read Leota's Garden, by Francine Rivers.

2. Teach myself how to make bread - I haven't tried making bread since we were in the Azores, and I really want try again. Next week, I will try again.

3. Eat healthier - I just need to toss the junk!

For now, that's what I have. I need to create a list of long term goals. I also need to track them and change them accordingly. Awe, here we go....

Poor Piglet

Back on November 28, 2010, you were introduced to the quietest, smallest and unique member of our family, Piglet.

Since that time, Piglet has been through many adventures, all while remaining patient and still so ever silent. The other day, Piglet experienced something rather unique. Piglet was given a swirly. A whole-body swirly, to say the least.

Sophia had slipped away and gone upstairs, while I was preparing lunch. As I walked up the stairs, I was greeted by my curious little monkey, Sophia that is, and an excited shriek. Sophia, excitedly, said "Piglet," while holding him up. She then turned and ran to the toilet, where she dunked him in the toilet again!

Needless to say, Piglet had gone for a swim. He was then tossed into the washer and cleaned up, just in time for nap time. If I were to guess, I think Piglet slept rather well that day.

Trees Are Good :D

The other day I spent some time on the internet looking for some new vegetarian recipes. Although the recipes I already have are good, we needed more of a variety. It was getting to the point where I felt like I was eating the same 7 meals over and over again. So, the hunt was on for something, not only new, but something my family would eat and enjoy.

One of the recipes I stumbled upon was found on the Taste of Home website. After debating, I decided to make this recipe:

Broccoli Cheddar Casserole:

* 8 cups chopped fresh broccoli
* 1 cup finely chopped onion
* 3/4 cup butter, cubed
* 12 eggs
* 2 cups heavy whipping cream
* 2 cups (8 ounces) shredded cheddar cheese, divided
* 2 teaspoons salt
* 1 teaspoon pepper

Directions

* In a skillet over medium heat, saute broccoli and onion in butter until crisp-tender; set aside. In a bowl, beat eggs. Add cream and 1-3/4 cups of cheese; mix well. Stir in the broccoli mixture, salt and pepper. Pour into a greased 3-qt. baking dish; set in a large pan filled with 1 in. of hot water.
* Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand for 10 minutes before serving. Yield: 12-16 servings.

And, guess what!?, my whole family LOVED this meal! Michael, who prefers raw broccoli, really enjoyed it and Sophia ate two plates full. I have to admit, I was one happy mommy.

I did cut the recipe in half, but I would make the whole thing if I were taking it to a potluck. Other then that, I followed the recipe exactly. Next time, I might throw in some cauliflower or maybe even some red bell peppers, but with that said, it was good just as the recipe is written.

Wisdom From the Wise

Upon returning to Minnesota, Michael and I have found, what we think may be, our home church, at Bethlehem Baptist Church. The church has many activities for the whole family and one I have come to enjoy very much is the MOMS group that meets the first and third Tuesday of the month. I have only had the pleasure of attending MOMS twice, but both times, I have been graced with irreplaceable wisdom, given by well-experienced moms.

Each time us moms gather, there is someone there to share a devotional with us, so-called, younger moms, and the devotional I heard yesterday tugged at my heart-strings. Yesterdays "mom" spoke about our devotional time with God. As a mom, I have found it hard to find time with God. I have always felt as though my time with God had to be at least a half hour and what I did had to be huge and elaborate, but really, that is not what God wants from us. God is just like our parents, and He just wants to spend time with us. God doesn't care if we spend hours upon hours in His word, although that is great, or if we chose to read through and study one of His books in depth, what He cares about is that we take the time, often several times a day, to meet with Him.

So, how can we do this? We spend some time praising God through music, and Sophia loves to dance to praise and worship music, we can read our Bibles, we can pick a small devotional book and we can pray. All those are great ways to spend time with God.

The "mom" who shared with us, yesterday, gave us a great idea. Each day she picks a Psalm, but you could chose any chapter in the Bible, and she reads through the Psalm as if she were praying it to God. Sometimes I find myself just reading through the Bible and not really soaking in the words, but this is what she (OR GOD) wants us to do. She then suggested getting a 3x5 note card, selecting the verse that sticks out the most, and meditating on that verse all day. She suggested we try to apply it to our lives. Ask God to open the eyes of our hearts and see how the verse applies to all the things we are doing, including changing the poopy diapers.

Now, I know this may not be something new, but as a busy mom to a toddler who is always moving, this is new and exciting for me. I thought this was such great wisdom and I wanted to share it. I do hope that you will be able to use this wisdom, as well.

Perfectly Puffy

At some point in my blogging experience, I believe I blogged about cookie making, but I can't find the post, so I will refresh your memory.

If you follow my blog and have for a long time, you may recall that I have had a really hard time making the Toll House Chocolate Chip Cookie. I can make any other cookie, except that one. They always turned out flat. They still tasted yummy, but they looked sad. I am not sure why I have had such a hard time, but I am here, today, to say that I no longer have that problem!

While staying with Michael's aunt, I discovered that should could make the Toll House Cookie perfectly! Not only did they look perfectly puffy, but they tasted amazing. So, the other day, after calling Michael's aunt, I set out to tackle the Toll House Cookie, once again. This time, they turned out perfectly puffy and tasted amazing!

The trick? 1/2 cup shortening, 1/2 cup butter (instead of the 1 cup butter) and an extra 1/4 cup flour. That's it! And as evidence, I am posting some pictures :D

Freedom to Cook

Since moving into our new home and finally being on our own again, I am thrilled to say that I have been able to cook!!! As many of you know, I love to cook. I also love to eat, but that is a whole other blog. Anyway, one of the very first things I did when we got our boxes was put my kitchen in order. Seriously, the kitchen was the first to be unpacked!

While transitioning into the civilian world, we were blessed to live with a wonderful family over the last few months, but with that came some struggles and trials in the kitchen. First, our vegetarian diet went out the window. In fact, Michael's aunt and uncle had purchased half a cow (consisting of 1000 lbs of meat) the first week we were there! In addition, Michael's aunt cooked all but 3 meals while we were there. Let me tell you that if you aren't cooking, you can't complain. Anyway, although the first few weeks were hard, we survived a diet primarily consisting of the cow that now resides in their freezers and we enjoyed the eating a little, yet anticipated our old diet!

Second, I had to get used to the fact that I was in someone else's home and that I was not the one cooking. I love to cook, so this was extremely hard. When I offered to cook, Deanna simply told me she already planned out what was going to be made. She is also one who serves others by serving in the kitchen, so I didn't want to intrude on this area in her life. Although a live in cook sounds amazing, it's not all that it is cracked up to be.

Finally, we ate a lot of junk, in addition to the creature in the freezer. The food was amazing, but it wasn't all together the healthiest. The foods were yummy, but loaded with milks, creams, and butters. When you aren't used to eating this way, a few things happen within your body.

So, with all that said, one of the very first things I did when I got into our house was make dinner! The second dinner in our new home, served among the boxes, was

"Helen's Linguine Caprese," which is oh so good!

1 lb Linguine
1 lb fresh Mozzarella Cheese
4 large tomatoes, diced
6 leaves fresh basil, chopped
1/3 cup olive oil
Salt

Mix together Mozzarella, tomatoes, basil, olive oil, and salt and let marinate at room temperature 30 minutes.

Cook pasta until al dente. Drain, Serve warm with caprese mixture. Enjoy!

Serves 6

This dinner is not only yummy, but very easy to make. I love fresh mozzarella, so this was a major treat for me.

We're In!

Okay, so I didn't blog much at all in February. I think I blogged once! Shame on me! March is here, and hopefully I will blog a bit more. It has been hard, since we haven't been in our own home and I haven't been able to find the time.

I can tell you this though, we are in our new home! I will post pictures within a few weeks. We have all the boxes unpacked, but I need to hang the curtains and get things on the wall, then you will get pictures and, hopefully, a more recent update.

Is Anyone Out There?

I know it has been a long time since my last blog, so I just wanted to see if I was still being followed :D

No, seriously, there has been a lot going on over the last few months and every time I sit down to blog, I either can't get the right words out or there is not enough time to write. Over the next few days, I plan on doing a little bit more blogging. There are a few things on my heart and on my mind, which may or may not be blog-worthy, but I will still attempt to spit them out. As for now, here is an update.

Hold on, I need to go back to the last blog to see what I wrote last.... I know, pathetic!

Lately we have had a major turn of events, as far as the job hunt goes. Actually, there is still no job, but God has taken us down a different path.

Michael will be enrolling into school as a full-time student, as of April 4th. He was given some valuable information in regards to finances, that makes this possible for us to do. He will be attending Globe University in Lakeville, MN, and getting his Bachelors in umm....something to do with computers! He is very excited about this and we truly believe this is God's will for us, at this point in our lives.

In addition, we found a place to live!! Yea! As of March 1st, we will no longer be living out of a basement and suitcases, but instead, we will be living right behind Michael's school. No joke! God totally set this up for us. We went out last Friday to look at a few places and I just happened to write down a name and address to our future town home. While we were out, I asked Michael if he would like to take a look at them. Just for fun, we headed over there. While driving he kept saying the area looked all too familiar. Well, we went inside and asked them if they had any 2 bedrooms available and the woman, Jill, told us all they had were 3 bedrooms. Well, we asked the price and it turned out that these super nice town homes were going to be CHEAPER then the 2 bedrooms we had just looked at!! After doing all the calculations, such as how much it would cost to do our laundry, commute back and forth to school and get a storage shed, we realized that this 3 bedroom town house, equipped with a washer and dryer and a garage was going to save us money! Further more, Michael realized his school was right behind us!!

This has also opened the door to be able to downsize to one car, since he can walk, saving us money on gas and insurance! God is good!!! Seriously, how perfect! Now, we are in the process of selling Michael's truck, getting my car ready to sell and looking for a new, more winter-friendly, gas efficient car to replace the two we will be selling. Hopefully all this will happen over the next few days.

With all that said, does anyone want a car or truck :D

Dear Margot!

So far, Margot is one of my favorite Scentsy of the Month Warmers. Normally, I don't buy the warmer of the months, because if I did, I would have WAY TOO MANY!! But, when I saw Margot, I just had to have her.

She looks black in the pictures, but she is actually a pewter color and when the wax is in, the color of the wax shines in the bowl. She is just too cute. And, just in case you were wondering, she is wearing pearls!

27 Days

27 Days, that's how many days Michael, Sophia and I have been in Minnesota. Each day I am reminded of how blessed we are to have a place to stay and food on the table, even though Michael hasn't found a job yet.

The job situation is the same, no luck! Michael has a few applications out right now and has been rejected from a few. We still have until February 23rd before Michael is completely out of the Air Force. This gives us a little bit more time.

I haven't been in the blogging mood lately. Thus the reason there are only 2 (after this one is posted) blogs for this month so far. I guess things are the same, so there is no reason to update.

Even though things aren't changing on the home and job front, we have made a little bit of progress. We think we have found a home church. We have been attending Bethlehem Baptist church. If you aren't familiar with this church, it is under Author and Pastor John Piper. We were recommended this church before leaving SD and so far we have liked what we have seen and heard. We are going to try one other church, just to make sure we don't have tunnel-vision. We want to make sure Bethlehem is where God wants us and not where we want to be. Does that make sense? Through the church, we have met some great people and are starting to get involved. Hopefully within the next few weeks we will make a final decision.

Sophia is getting bigger. She continues to thrive. Thursday marks 15 months. She has a well-baby appointment that day, and just like all her well-baby appointments, I am excited to see how much or little she has grown. She can now go up and down the stairs, she is eating us out of house and home, she has been playing with other children and continues to surprise us each day. The other day she was playing with a doll she had gotten for Christmas and was actually trying to feed the baby the bottle! Where she learned this, I don't know, because if there is one thing I know about my child, it is that she does not know what a bottle is! She is too cute!

I don't have a usb cord with me and I can't come to the terms of buying one, since we have a million in our shipment, so until I get one, I won't have any new pictures. I have taken a few, so I am sure there will be a blog post with just pictures, in the future.

Well, the daycare kids are quiet, Sophia is napping and Michael is out. I think I might also try to take a nap. Awe, how blessed am I? :D

A Glimpse into the Past

Lately I have been thinking about the events of the last year. I have played the last year over and over in my head, as if I am hitting repeat on the DVD player. As I look back, I am reminded of all the love, heart-ache and trials we have faced as a family of three. If you would of told me that I would have to go through some of the things I did last year, I would of told you 'no way, count me out.' But, at the same time, I am reminded of Job. I am reminded of the trials he went through and most of all, that God chose those trials for Job.

As I reflect on the last year, I am reminded, mostly, that I am a sinner. Over the past year, I have been a bitter person. Nine days into 2010, our family was faced with a HUGE road block. Michael hit a turning point in his military career and in his life that put a huge burden and test on us. Michael spent several weeks away from home throughout the course of the year, leaving me with a 2 month old baby and as a single mother. There were some mornings that I didn't want to get out of bed. I didn't want to face the world. I didn't want to get up and take care of my child. I wanted to be selfish and I wanted to be alone. But, with an infant, that was not a choice.

Although God was with me each day, there were many days when I woke up and chose to ignore God. I couldn't understand why we had to go through these things, until one day, God showed me something so important. God showed me His grace and His love for me. He reminded me that I was not alone. Although I was faced with changing diapers and taking care of my baby without another human, I still had God.

In addition to becoming bitter, I started to close a door on my heart. Without realizing it (at the moment), I took advantage of people who didn't deserve it. Because of that, I lost friendships and shut people out of my life. During this past week, this has been more evident in my life. Although I have tried to say I am sorry, I have lost respect and the friendships of these people. My heart aches to think of how I hurt these individuals. Hopefully someday, they will find a place in their hearts to forgive me.

You may be wondering why I am blogging about all this, but Michael actually encouraged me to. I have felt a great burden this week. I have repented for my bitterness and I pray that those who I hurt will forgive me. I want to admit that I am a sinner. I want to admit that I make mistakes. BUT!!!! I also know that I have a heavenly Father who gave His one and only son to save me! HE LOVES ME!!! As a mother, I often think about how I don't think I could give up my child, yet, God selflessly let His son suffer upon a cross for me. This was after He let his son be grossly flogged, carry a cross upon his torn fleshed back and then hung from it until God finally let him escape the pain. Jesus is my life. Jesus is what is going to get me through this next year. Jesus is the reason I made it through 2010!

We just started a new year and even though we are just 11 days into it, I have already seen God do amazing things in my life. He has given us a place to stay while we are searching for a job and a home. He has provided us with a new church family and new friends. With that said, I KNOW He is going to provide Michael with a job and us with a home. God loves me and God loves you!

In the Frozen Tundra

Michael, Sophia and I arrived in Minnesota on December 22nd, in the late evening. The drive went smoothly and Sophia was a great traveler, despite the lack of interest to take any sort of nap. She sat in the back seat and consumed an unmentionable amount of cheddar bunnies and watched Winnie the Pooh, while Mommy kept her eyes on the road and Daddy drove the pick-up behind us, and Neva kept him company.

God provided us with perfect roads. They were so clean and dry. He couldn't of provided us with anything more perfect. I had driven the same roads back in February and it was scary! There was so much wind and ice that I really feared for my life and the little baby, who at the time, slept soundly, while I drove.

When we arrived in MN, we were greeted by a lot of snow. A lot really doesn't describe what we see when we look outside the windows!

We spent Christmas Eve with my family, opening presents and pigging out on food. We have had to take a short break from our vegetarian ways and have enjoyed eating some of the meat that has been set before us. I have to admit though, I am ready to go back to our normal veggie diet.

Christmas morning we awoke early and drove to Iowa, where we celebrated Christmas day with Michael's family. We opened gifts, ate more food then our bellies could handle and vegged on the floor and couch and enjoyed the company of silence (as the babies were sleeping) and watched Toy Story 3. Later that night, we drove back to MN, so we could go to church the next morning.

Now, at the moment, we are occupying a tiny room in Michael's aunt and uncle's basement. They have opened their doors to us and this has been such a blessing. We are able to live and be comfortable. We plan on staying here until Michael can find a job or at least until we can no longer store our belongings in storage (we have 90 days).

Our prayer is that God will provide Michael with a job and we will be able to find a place to live before we have to take our things out of storage. Although we are blessed with all the help we are getting, it is also hard, as we have lived on our own for years and now we are relying on people to help us out. I believe this is all part of God's plan and I am grateful. I know He likes to stretch us and bring us to a place where we aren't comfortable and I am okay with that.

Also, Sophia and I are not feeling well. She has her first ear infection and has several teeth coming in. I have a cold and some sort of eye infection, which doesn't help when we aren't in our own home and when I am trying to chase and console a sick baby. Once again, all part of God's plan.

I will try to update as things progress. Right now, that's the short. I wish you all a Happy New Year. Thank you for the prayers!

T-Minus 5 Days

That's right, we have 5 days left before we hit the road. This week is just about over and we have done a lot.

Michael finished his last day of work yesterday. It was a bittersweet day. He is feeling a bit down, because he will no longer be a member of the USAF. He has worked so hard and has had a passion for his job and to say good-bye, it wasn't easy. He is proud to serve his country and has been blessed while doing so. We know, however, that God wants us to move on. What's next? We don't know.

I have spent most of my time in the house. On Monday, I had lunch with a good friend, which was a great way to get moving off of my mind. We also walked around the mall and just spent some time together. It was great. Tuesday was spent getting a few last minute things done i.e. laundry, dusting, dishes washed, and final things sorted. It was a busy day and ended quickly. Wednesday we spent the day watching the movers pack up our things. United Moving company was GREAT. The ladies who packed our things did a wonderful job. One of them packed up piglet and blankie, which gave mommy and daddy a heart attack, but as a grandma, she knew how important security objects were and she unpacked the box for us. Thanks Joyce :D Thursday was a bit of a down day. We were scheduled to pack up, but the packers completed the task on Wednesday, so Sophia and I ran a few errands and checked a few more things off our list. In addition, I had a Scentsy party, which will help out financially, as we move. Lastly, today, Sophia slept in, so Michael went over to the house to meet the packers again. After sleeping beauty arose, we went over to help. Sophia entertained the movers, while they packed up and mommy cleaned the rest of the fridge and freezer and started on the dishwasher. The movers blessed us with their company during a short lunch break and back to work they went. Now, Sophia is napping and daddy, well, he is either back at the house or doing some more out processing.

Tomorrow, Sophia will be going to Andria and Chris's house, while Michael and I finish cleaning the house. Since we got the big things done, one bathroom, the oven and stove and the fridge, tomorrow will be a little easier. We will have to clean 2 more bathrooms, remove a few more nails and clean up the rest of the kitchen. Strangely, we don't have to clean anything over 6 feet, so we don't have to clean light fixtures or pretty much anything I can't reach. We also don't have to clean windows or patio doors, saving us a lot of time too. Hopefully we will get everything cleaned out tomorrow, because our carpets get cleaned on Sunday and our final out is on Monday.

As far as our checklist, we have two things left to do, one of which can't be done until the day we move. I am so glad we are just about done with it!

I have taken a few pictures, but I forgot to pack the USB code, so at the moment, I can't post them. When I find a cord, I will post some pictures, mainly of Sophia helping (or so she thought) clean :D

Gnaw Gnaw...

This morning I spotted what looks to be like another tooth popping up in Sophia's mouth! This is very exciting, as she is now almost 14 months and she has half of a tooth. Yes, folks, half a tooth. Although I don't like the teething process, it is nice to know that some where, beneath those gums, lies some teeth.

Busy Bees

Our family has been busy getting last minute things done, in order to be ready for the movers when they come on Wednesday, Thursday and Friday. I have been busy checking off our list and as many of you know, with a one year old, this is no easy task! It also seems like every time I check one thing off, something else has to be added. Well, we are getting closer to the bottom and whether or not we get it done, the movers will come anyway!

Yesterday, Michael cleaned out the car and while he was doing so, Sophia and I cleaned her car seat. I think Sophia thought it was more exciting then I did, simply because "her" chair was in the living room. I got some cute pictures. Had I thought of it, I would of video recorded her getting mad at me for vacuuming up the crumbs that found refuge in the seat crevasses.

15 Days

I can hardly believe we only have 15 days and a morning left before we move! Although the checklist is getting smaller, I feel like there are still so many things we need to do. Plus, it seems like I keep adding to the list.

We also only have 9 days left in our house. As much as I dislike the house, mainly because of the lack of storage, it will be bittersweet leaving it. This was the place we became a family of three. It feels like it was just March 1, 2009 and we found out I was pregnant. It also feels like it was just October 22, 2009, when we walked through the doors with Sophia for the first time. It will be sad to say good-bye to this place we call home. I know God has other plans for us and we have always made every place we have been home, but this time, it's a little different.

In addition, it is going to be hard to say good-bye to some close friends.

Okay, before I start crying, I will move on!

Michael has 6 shifts left and has been really busy with work. He just got done working nights and I am so glad those shifts are gone! I don't want to look at night shifts ever again, hopefully God doesn't want us to go through those either.

We will be home right before Christmas, which is exciting. We will spend Christmas Eve with my family and Christmas day with Michael's family. We have to drive down to see his family, but it will be worth the drive and the drive is pretty short.

After we celebrate Christmas, our plan is to start looking for an apartment or townhouse. We aren't too picky about location. It would be nice if we had a job lined up, but we trust God will put us right where he wants us.

If I don't get back on here til after the move, which I hope is not the case, please keep us in your prayers! We are praying for a sunny traveling day and clean safe roads!

Ho Ho Ho....

Last year I picked up some wooden picture frames from Michael's that were marked down 75%. At the time, I had no clue what I would do with them, but I knew I would eventually come up with something.

Over the past few days, Sophia and I have been working on a Christmas craft/gift. I know that I can post this early, as the grandparents don't check the blog ;) and it is something I thought would be great for any Christmas gift.

First, I painted the frames green and Sophia marked them with her hand print, which is no easy task for a one year old, mind you!

Second, we used Sophia's fingerprints to make the nose, mouth and cheeks....

Then, I glued on some googly eyes and a Christmas hat....

And finally, Sophia used her little fingerprints, once again, to make the fluff around the hat and I glued a ball to the end of the hat and voila!

Now, all I need to do is get a cute picture of Sophia, and put it into the frame!

Meet Piglet

Sophia is coming to the point in her life where she is starting to realize that some things are hers. Over the past few weeks she has developed a pretty close relationship with Piglet. Now, when she gets up in the morning or from a nap, Piglet must come with. For the first time, last night, I asked Sophia to go get Piglet and she did! I was surprised because one, she knew what I was talking about and two, because she did it! She never ceases to amaze me! Each new day comes with surprises and changes. Being a mother is never boring!

Eggplant Gratin

While I was searching for some yummy vegetarian recipes, a friend of mine sent me a list of a few, so far, really good recipes. Until the other night, I had not tried eggplant. I actually debated on even trying it, but I am so glad I did. I think eggplant might be one of my new favorite vegetables! In addition, Michael and Sophia also enjoyed this dish. Thanks to Helen, I have a new recipe to share with you.

Eggplant Gratin

Serves 2

1 eggplant, unpeeled, sliced 1/2-in thick
1/2 c. Ricotta Cheese
2 Large eggs
1/2 C. half and half or whole milk
1 C., plus 2 T., fresh grated Parmesan Cheese
Kosher Salt
Freshly ground black pepper
3/4 C. good bottled marinara sauce.

Preheat the oven to 400 degrees.

Toss sliced eggplant with olive oil, salt and pepper, and bake for 8 minutes. Turn slices, and bake for another 8 minutes. Transfer to a paper towel and drain.

Meanwhile, in a small bowl, mix together the ricotta, egg, half and half, 1/2 C. of the Parmesan, 1/8 t. salt and 1/8 t. pepper.

In a pie plate, place a layer of eggplant slices, then sprinkle with 1/2 C. Parmesan, salt and pepper, half ricotta mixture, and spoon half of the marinara sauce. Next, add a second layer of eggplant, more salt and pepper, other half of marinara sauce, half ricotta mixture and finally 2 T. of grated Parmesan on top.

Place on a baking sheet and bake for 25-30 minutes, or until the custard sets and the top is browned. Serve warm.

Our orders have been cut! We got them Wednesday evening. Praise God. Because our orders came soooo late, everything had to be pushed back, including our move date. Michael is actually out right now getting a few things done and making appointments to get our housing pre-inspected and our things packed out. Although this is exciting, it has also made this experience a reality. In about a month, we will be moving and in about 3 months, we will be transitioning from the military world to the civilian world. Oh boy! Thanks for all your prayers. I will try to continue to update you as much as possible.

I have to admit that one of the things I will miss the most about being on Ellsworth AFB is hearing Reveille in the morning, Retreat in the evening and Taps at night. Lately, Sophia has found great joy in hearing Retreat in the afternoon. If she is not still sleeping from her afternoon nap, her little eyes light up and she starts to dance. I believe, like her parents, she too is proud to be an American.

This is Life

Since I have a few minutes, I thought I would give you a bit of an update. What's going on in the Mathews' household? Nothing.... As of yesterday, we still didn't have our orders, thus preventing us from doing anything that requires us to move. We still can't make appointments for pre-inspections, movers to come pack up our things, or inspections. Michael can't make any appointments or sign out of anything because we don't have the papers. Once we get them though, the ball will start rolling and it will be rolling very quickly!

We were originally supposed to move November 24th, which was exciting, because we thought we would be home for Thanksgiving, but that no longer stands. Someone in charge of doing the paperwork put the DATE on the WRONG line, causing a bunch of chaos and a standstill. Our new date to move is supposed to be the 29th of this month, but next week we have a 3 day "class", the following week is Thanksgiving and then BAM! the 29th is here. From the looks of it, I am not sure if we will be leaving then either.

I am not stressing out about it, mainly because I can't do anything to make the process proceed. I know God has His perfect timing and I am okay with that. I do have to admit that I wanted to be gone before the weather turns for the worse, but I am not sure that will happen either. Once again, God is in control.

When we hear something new, you will be the first to know. For now, please pray our orders come on Monday! That really is the latest they can come, if we are to be gone by the 29th.

"Oh Bother"

The other night I made the "loaded bowl" for dinner.

I thought for sure Sophia would really enjoy this dish, because it was loaded with her three favorite foods: black beans, tomatoes, and avocado. Boy was I wrong! In fact, this is the only thing she hasn't liked, since she started eating real food. After much thought, I came to the conclusion that she doesn't care for the texture of quinoa. This doesn't surprise me, as quinoa is an acquired texture.

In addition to Sophia not liking it, neither did Michael, kind of. Michael informed me that he loved the flavor, but the texture didn't have anything to write home about. We agreed that I would try making this dish again in the future, but next time I will use brown rice instead of quinoa. Better luck next time, right?

Tea For Two Gone Bad

Sophia was given a gift certificate to Toys R Us for her birthday. In addition, she was given two of the same gift, so she was able to take one back and exchange it for something else. Last Saturday, while I was at a Scentsy party, Daddy and Sophia did just that. They hit Toys R Us. Now, because I know my husband all too well, I gave him a few extra dollars so he could get the toys HE WANTED to get for Sophia. Well, just as suspected, he spent some of that money on three exciting toys. First, he picked out a cow on wheels. When you push the cow, it moos....and it's not a cow moo, it's more of a man mooing...odd. Second, he picked out a wooden caterpillar with a string. He has a thing for wooden toys. And finally, he picked out a plastic tea set. Now, I have to admit that all three toys were cute, until I became victim of a tea party gone bad!

Yesterday, while I was sitting on the floor with Sophia, she hit me (not on purpose) with the plastic teapot! I went face forward into the ground and choked back the tears, while my daughter stood and laughed at me. I am guessing she thought I was still playing. I didn't think anything of it, until I my sight got a bit blurry and I could see my eyelid!

Luckily, the damage wasn't too bad. I was left with a black and swollen eye and a happy kid :D The swelling and blackness has gone down a lot and the picture isn't the greatest but you get the point. For now, I think I might let daddy and Sophia have tea parties, while I stand on the sidelines and take pictures.

If there were such a rating for hurricanes or tornadoes, Sophia would be a category 6. This morning, Hurricane Sophia tore through our home, tearing everything within her reach off shelves and out of cupboards. In addition, this mom, yes me, left the pantry door open and turned around to find Hurricane Sophia whirling around in there too! Because of her lack in height, she only managed to pull down the canned goods from the bottom shelf. Had she a few more inches on her, we would of had a white, powdery (from sugar and flour) hurricane whirling around the house! Thank goodness she isn't tall :D

And who knows, maybe Sophia wanted to whip something up for lunch and she was just looking for the right ingredients.

Nonetheless, I have decided that the messes are a good thing. Sophia is learning and having fun. It keeps her busy and makes her nice and tired, therefore, longer naps...maybe!

Dave Ramsey is well known for his statement: "Sell so much stuff that you're kids think they're next?"

I am a firm believer that if you are in debt, you need to start selling "stuff!" Imagine how much "stuff" you have just sitting around your house. Are there things that are shoved into closets or drawers that haven't been used in years? If so, sell it! Why do we keep stuff??

God speaks about us storing things too. In Matthew 6:19-21 Jesus says "Do not store up for yourselves treasures on earth, where moths and vermin destroy, and where thieves break in and steal. But store up for yourselves treasures in heaven, where moths and vermin do not destroy, and where thieves do not break in and steal. For where your treasure is, there your heart will be also." He wants us to store His treasures in our hearts. We are to memorize God's word and store it where no one can destroy it, in our heart. This will also draw us much closer to God.

This brings me back to selling "stuff". Michael and I have been weeding out our house. We aren't in debt, in fact, we have been DEBT FREE since April 2008, but we just have stuff sitting around. Stuff we don't use. This summer we had a garage sale and made almost $60 and just this week, we put some movies on Ebay and made another $50!

What is the point to this blog? I don't know! Maybe I want to encourage you to get out of debt (or stay out of debt), or declutter, whatever it may be....get rid of some stuff :D

A Couple of Ducks

I thought I would go ahead and update everyone on what is going on in our lives right now. So far, nothing!

We are still waiting for our orders and without those, we really can't do much. We decided we would have the movers pack up our things and move us, since we won't have a place right away. The government will pay for us to store our things for up to a year, giving us a little bit of time to find a place. It just so happens that we can't make an appointment to have our things moved until the orders are in our hands. Ho hum. We feel like a couple of sitting ducks and as each day passes, our stress level seems to go a bit higher.

As of today, Michael has five more shifts left at the fire department. I know he is looking forward to his last day. At the moment, he is working nights, which doesn't help the stress level either. I feel like I can't do much during the day, because he is sleeping and I don't want to wake him up and then by the time he leaves, I just want to get Sophia down to bed and enjoy the few hours I have to myself. Once he is done with work (and we have orders) he will start his out-processing and we will have a three day class we have to attend.

We are still teaching Dave Ramsey FPU, but our last night will either be the 16th or the 22nd. We haven't decided which day, but that is something we need to discuss further. If we are in TLF then we should just go to class so we can get out of the crammed little hotel room and do something. We will see. We have enjoyed our class and the people in our class. Although there are a few challenges, we are seeing some progress and most of the class is on board and ready to get out of debt. Just like any class, there are a few that aren't ready to make changes. We are praying for them and hope that those individuals will hear something Dave has to say!

Over the past 2 weeks, our house has been full of visitors. Our friend, Heather, came to visit us for a week. We met Heather while we were stationed in the Azores. She is one of those friends that we love having around. Even though we don't talk all the time, when we do, it feels like we just talked yesterday. We had a great time with her and I know, once she warmed up, Sophia loved Heather too. The best part is that Heather actually lives in Wisconsin, which means we will be even closer to her when we move.

After Heather left, my sister and nephew came and stayed with us a week. We just spent a lot of time having fun. It was great to see Sophia and Riley play together. My sister and I were faced with a few challenges, but we survived. I also can't wait to be in Minnesota, because we will be 2 hours away from Amber and Riley, rather then 13! It will be great!

While Amber and Riley were here, Michael's parents and grand-parents also came. Instead of staying at our place, they stayed on base in TLF. This made things really easy for all of us. Once they had their pass, they were able to come and go as they pleased. We were able to spend some time with them and they were also able to do some sightseeing and things they wanted to do. Sophia preferred grandpa and great-grandpa over the grandmas, but I am sure she will learn to love them all, once we move closer to home.

I have been selling a few scentsy things. I have gotten off to a slow start, but hopefully I will be able to do more in MN. I had a party this past week, which was online and I have two shows before I leave. I plan on using the money I earn for Christmas. I have enjoyed what little I have done so far and I look forward to selling more in the future.

Sophia is getting her first tooth. Slowly, but it is coming. I can see the tippy top of it. The tooth has broken through the gums, so it is a matter of it just coming out. I didn't realize this whole tooth process was such a process. She is a trooper and is doing well. We had a scare last week, as she is allergic to something else, in addition to the Amoxicillian. It's a toss up between homeopathic teething tabs and peanut butter. The doctor thinks it is the teething tabs, as she has had peanut butter before and didn't react. He said at this point and because of her age, the only way to know is to give her a little more peanut butter. I have some Benadryl on hand and I plan on doing this tomorrow or Friday. I am praying she is allergic to the teething tabs and not the peanut butter. Michael and I love peanut butter, so this would make us sad.

Fondant Fun

Yesterday we celebrated Sophia's first birthday with a "Oh So Sweet Ladybug" party. We had a wonderful time. I had decided a few months back (maybe six...teehehe) that I wanted to try to make her cake. I didn't know what I wanted to do, until recently and I decided to make a cake to match her theme. I don't have step-by step pictures, as they are on my sister's camera, but I have a picture of the finished product. I am not sure if I will be making another fondant cake any time soon, but I was happy with the outcome.

First Craft

We decided to have Sophia do her first craft last week. Daddy was also in the mix, which made for a big mess!

We realized we used too much paint! Next time, a little less and don't worry it was non-toxic and washable!

Calm Before the Storm

October 24th, yesterday, marked one month before Michael, Sophia and I load the cars and head to Minnesota. Michael has been approved for a medical discharge, which means he will be ending his military career, officially in January of 2011. The military allows us several days to hunt for a house and Michael has about of month of leave saved up, which will give us some time to get used to the new changes.

We have decided and feel as though God wants us to go back to Minnesota. Minnesota is home for both Michael and I, which is why this makes the most sense. Or at least it makes the most sense to us right now.

At the moment, we are waiting for our orders and this could take some time. As soon as Michael gets his orders, we can make appointments to have the movers come and pack our things; we can schedule housing inspections and start sorting the things we need to take with us. Things are calm right now, but once those orders come in, everything will pick up and the next month will fly by.

In addition, we will need to find a place to live. We are going to look for an apartment in the Twin Cities area. Michael will also be looking for a job.

Although we hate saying "good-bye," God has given us peace. This will be our 5th move and, perhaps one of the hardest, with the transitions we will go through. We have never truly felt "at home" here in South Dakota, which makes this move a little easier. We are looking forward to being closer to home. Furthermore, we are looking forward to closing this chapter in our lives and opening a new one. We know God has great things in store for us and we are looking forward to seeing what those things are.

From here on out, blog posts may be a bit scarce, but I will keep you as updated as I can. Stay tuned for a new chapter in our lives.

Happy Birthday Sophia

On October 20, 2010, Sophia turned one year old! This last year has been such an adventure and a blessing! Although her big birthday bash isn't until the 30th, we celebrated with a cake, which she loved :D

"Very Slim"

The other day we took Sophia to the doctor for her one year well-baby appointment and while we were there, the doctor prescribed her Amoxicillin for a cold that was lingering for over a month. Before leaving the doctor's office, I asked him what the chances of Sophia having a reaction to the medicine were, if her parents aren't allergic to it. He assured me the odds were "very slim."

Well, yesterday morning and two days after starting the medicine, much to my surprise, Sophia woke up looking much like a spotted giraffe. Her face was puffy and she had hives on her face. I didn't think much of it, until I got to Bible study and the ladies said something. After a few more minutes, Sophia had hives on her back and by the time we got to urgent care, Sophia was covered in hives. As scared as I was, I was also chuckling, because I honestly thought she wouldn't have a reaction to the medicine.

The PA looked Sophia over and said that it probably isn't something to be too concerned with, since it was her first dose, but we should make note of the reaction and make sure we inform doctors, in the future. In addition, he took her off the Amoxicillin and told us to give her some Zyrtec. After leaving the urgent care clinic I called the base clinic and got a second opinion over the phone. The doctor said the PA was correct and he also put Sophia on a new antibiotic from a different family. We wanted to wait until this morning to start the medication, just in case she has another reaction. So far, we haven't seen any additional polka dots.

Here's hoping we will have better luck with medications in the future!

11 Months and 3 Weeks

Sophia had her one year well-baby check-up today at the clinic. She had it a week early, which means she will need to wait another week before she gets her immunizations. Besides her little cold, Sophia is fit as a fiddle. She showed off her many milestones and talked plenty, during her appointment. She weighed in at 20.9 lbs, putting her into the 50th percentile. Lately, I have been calling Sophia "short stack" and we realized today that this nickname suits her well, as she measured in at 27 inches, putting her in the 15th percentile! She is short, just like her "mama". Her head also measured small, at 17 inches and in the 20th percentile. The doctor said she looked great and that she was growing very well.

This doctors appointment couldn't of come at a better time, as Sophia hasn't been feeling well over the last few days. She has been crabby, stuffy and has had a fever. It is nearly impossible to get an appointment on base, so today's appointment was perfect. In addition to her well-baby, the doctor checked her out and prescribed her Amoxicillin, because she has had this cold for about a month, which could mean it is not a virus, but a bacteria instead. I praise God for His perfect timing!

We had a difficult time giving Sophia her Amoxicillin. Normally, she likes her vitamins or tylenol, but she didn't care for the Amoxicillin. I hope she will get used to the taste and it will get easier to give it to her, as we have 19 more doses to give her.

In other adventures, Sophia started drinking cow's milk this week. Woah! She hates it! I just give her a little at a time, but she spits most of it out. We have tried to give it to her in both a sippy cup and a normal cup, but she doesn't like it. Is this common? Is there a trick? The lactation consultant said it might take about 17 times before she gets used to it. I sure hope she starts to enjoy it soon. I have started to wean her from breast milk and I know I can't breastfeed her into her teen years! As far as the weaning, she is down to 3 times a day and I plan to have her fully weaned by 15 months. Weaning is bittersweet, but it is time. I need to have my body back and Sophia doesn't stick around long enough to feed her. She is too active and wants to do other things.

God Moves in Myserious Ways

Over the last few weeks our family has been tested in numerous ways. God is moving in our lives and we are starting to feel the the ground shift. I know that the recent events aren't meant to be bad or evil, which gives me great peace. Our God is a God of love and everything He does is for His glory. Although I am starting to get uncomfortable with the load of events that are piling up, I know that God is still here. Knowing that this is all happening for God, excites me.

As an example, twice this past week I have been thankful for our emergency fund. We have had two things happen with our car, costing us over $1200. In the past I would have panicked, but because we have the money put away, I am panicking less. With the changes that will be occurring in our future, it is hard to see our emergency fund dwindle. I believe God is trying to get us to rely on Him and not on our stash of emergency cash. Michael will be getting out of the military within the next year (we aren't sure exactly when) and we were comfortable knowing we had this money tucked away, but God has made me squirm this week. The money we counted on is not there anymore. Although we will have some money put away, a good chunk is missing.

Deep down inside, though, I can feel God. I can hear Him saying "trust in me, because I am here and I can get you through this." As I have gone though this week and as I write this blog entry, I am reminded of the following song lyrics

Dave Ramsey

I don't think I have mentioned this, but Michael and I decided it was about time to teach Dave Ramsey Financial Peace University. We had the chance to take the course when we lived in the Azores and we felt God calling us to teach it at our current church. Sadly, we ordered the materials almost a year ago and we officially started today. We think that it just wasn't the right time when we first order the materials. God knew when the right time would be.

Today marked the first official class and despite Michael's absence, the class went well. We have a pretty decent size group, mixed with both young and older couples and a few singles. Each couple/single seems excited and eager to take this step in order to change their finances and their lives.

In addition to teaching the class, I look forward to gaining some knowledge from Dave Ramsey too. It's never a bad idea to go over what you have learned. We enjoy Dave Ramsey and we are excited to share this experience with each individual in the class.

Because of confidentiality, I will not be able to share the things that are discussed in the class, but I will try to share some of the tidbits that we learn throughout this experience.

With all that said, I am mainly writing this blog entry to ask you to keep our class in your prayers and keep Michael and I in your prayers as we facilitate. We know Satan will try to cause problems and we need to trust God.

A Walking We Will Go

Size Matters

Since switching to our vegetarian diet, we haven't eaten much fast food, with the exception of Subway. This is not something I miss, nor does our budget.

Today I went for a drive and I needed to get myself some lunch. I thought I would stop at Taco Johns and get myself a bean burrito. I did this for two reasons, actually. The first being that this was the only quick place in the town I was in and two, because once I got the idea of a bean burrito in my head, there was no turning back.

After running my errand, I pulled up to the drive-thru and ordered a small soda, a small potato ole and the oh-so-wanted bean burrito. I stopped at the first window, paid my $4.62 and drove up to the second window. All I remember thinking was how LARGE the small soda was. I was amazed. At first I was enjoying my burrito. It was small and a pretty good size, but then I started to eat the potato oles. I didn't look into the bag to see how much was in there until about 5 minutes after. I pulled the box out and to my surprise, I still couldn't see the bottom of the box! This was too much for me! I wanted a small. The thought of how much food I still had left in the box disgusted me. I tossed the rest of the potato oles into the bag and finished my drive.

I am still shocked at how large the portions were! Thus, this pointless blog entry. We, Americans, are constantly worrying about what we look like and we probably should if we decide to consume as much food as I had sitting next to me in the truck!

I still enjoyed my bean burrito, but I think my fast food trips will continue to remain scarce.

A New Job
